Fennel & Raddicchio Holiday Salad

2 medium sized fennel bunches
1 red large radicchio
1 cup of black curred Italian olives
2 green onion stems
2 cups of orange or yellow cherry tomatoes or yellow & red peppers
1/2 cup of fresh diced parsley
2 tbsp of extra virgin olive oil
2-3 tbsp of strawberry vinaigrette
1/2 tsp of salt and pepper
1/2 tsp of oregano

1. Clean and slice fennel and radicchio into pieces.
2. Add cleaned tomatoes, olives,peppers,  chopped green onion, parsley, olive oil, vinaigrette and spices.
3. Mix and enjoy!

Serves 6-8
