Low-Fat Simple Pastina and Fagioli Soup
1/4 of a spanish onion diced
1 clove of chopped garlic
1 tbsp of extra virgin olive oil
2 cups of fresh spinach
1 900ml of low sodium veg broth
1 can of romano beans drained
300ml of a 600ml jar of strained tomatoes
1/3 of a cup of fresh chopped parsley
1 stem of fresh tyme
Dash of salt and pepper
A dash of fresh chili flakes
1 cup of cooked organic or quinoa pasta
In a deep pot, fry onion and garlic and then add fresh spinach. Cook for 2 mins.
Add beans, tomato sauce and veg broth. Add spices and let simmer on low heat for 20 mins with lid partially on.
In a sperate pot, boil pasta. Drain pasta and add to soup. Mix and cook for 2 more minutes.
