Mushroom and Turnip Soup

2 tbsp of extra virgin olive oil
3 white turnips
2 cups of fresh mushrooms
2 cloves of garlic
3 green onion stems
1/4 of a spanish onion
1/2 cup of fresh parsley
1 bay leaf
1 stem of thyme
1 900g of low sodium mushroom or vegetable stock
A couple dashes of salt and pepper

1. Peel, clean and chop turnips and mushrooms and place aside.
2. Add olive oil to a large soup pot. Finely chop onions, parsley and garlic and add to pot. Fry for a couple mins. Add turnips and mushrooms and spices. Stir and cook
for 8-10 mins.
3. Add broth and simmer on low heat for 30 mins with lid partially on.
