Spicy Quinoa Rapini & Zucchini Stir Fry

2 tbsp of extra virgin olive oil
1 bunch of rapini
2 zucchini
1 tsp of tomato paste
1-2 tbsp of hot sauce
1/2 cup of fresh curley parsely
1/2 cup of fresh chives
Dash of salt and pepper
1/2 leek onion
2 cloves of minced garlic
1/2 cup of water
1 cup of fresh cherry tomatoes
1 cup of dry quinoa

1. In a wok, add olive oil, chopped onion and garlic and fry for 1-2 mins.
2. Add clean, chopped rapini, peeled and chopped zucchini, chopped parsley, chopped chives, cherry tomatoes, tomato paste and water. Stir and cook for 10 mins on low heat. Set aside.
3. Boil dry quinoa in water and drain.
4. Add quinoa to stir fry vegetables, mix and serve.
