30 Minute Homestyle Hearty Chicken Noodle Soup
2 cloves of chopped garlic
2 tbsps of extra virgin olive oil
1/4 cup of chopped Spanish onion (optional)
1-2 stems of fenel finely chopped (optional)
1 jalapeño pepper thinly sliced (remove inside seeds) (optional)
1 large carrot thinly sliced
2 pks of concentrated chicken broth (132g x2)
8 cups of water
dash of pepper
1 large piece of uncooked chicken breast chopped into bite sized pieces
1 375g pk of egg noodles
1. In a large pot add oil, garlic, onion, fennel, pepper and chicken pieces. Cook for 5-7 mins.
2. Add carrots, jalapeños, water and chicken stock. Mix and cook on low-medium heat for 15-20 mins.
3. In a seperate pot boil egg noodles and drain. Add noodles to soup mixture.
