Baked Spicy Pesto Spaghetti Squash

1 spaghetti squash
Salt and pepper

1. Cut squash into half and clean out center. Add a dash of salt and pepper to each half.
2 Bake in oven uncovered on a baking tray lined with parchment paper for 35 mins at 400 degrees.
3.Remove from oven and scrap squash with a large fork. This will quickly allow the spaghetti strings to form.
4. Serve with fresh tomato sauce or olive oil.

Spicy Pesto & Parsley Topping:

3 tbsp of red spicy jarred pesto spread 
1/4 cup of chopped parsely 
1/4 cup of sliced asiago cheese pieces
2 tbsp of extra virgin olive oil

1. Combine all toppings in a bowl mixing well.
2. Once squash is forked, add topping onto each squash half using a fork. 
2. Add cheese pieces and place back into oven for another 2-3 mins so cheese melts.
3. Remove from the oven and serve:)
