Gluten-free Penne with Spicy Swisschard Sauce
I love making pasta with absolutely anything! This dish is simple, clean and takes about 30 mins total. Swisschard is a great vegetable that when added to sauce it tastes amazing! Swisschard should be washed well, as it it is a veggie that can hide soil amd debris and so it may require a few good rinses before cooking it. I like to soak it in cold water in a bowl for about 15 mins before i add it to my dishes but rinsing it a couple of times can do the trick!
This is a dish i grew up with and it always makes me happy to make for my family. Its great with any bread to dip as well! This is comfort food for the veggie lover!
As well, when you are choosing your sauce, it is really important that you choose one that is of a higher quality brand that is well above the dollar mark. The taste of your dish will be noticeably more authentic. I love making sauce in bulk and then freezing it for those busy nights when i dont have much time at all.
2 cloves of garlic
2 tbsps of extra virgin olive oil
3/4 of a bunch of fresh clean chopped Swisschard
1 large can of Italian purred plum tomatoes
2 tbsps of hot sliced peppers in oil
2 pieces of fresh basil
1 340g pk of gluten-free penne pasta
1/4 of a tsp of salt and pepper
Fresh parmegiano cheese
1. In a large flat pot add oil, basil, garlic and tomato sauce. Cook on low setting for 10 mins.
2. Add cleaned, chopped swish chard, stir and cook for an additional 15 mins on low setting.
3. In a seperate pot, boil pasta and drain.
4. Add pasta to sauce mixture.
