Lentil and Quinoa Pasta with Spinach Tomato Sauce
1 350g pk of lentil/quinoa pasta
1 large can of Italian Plum Tomatoes
1 clove of garlic
Dash of salt and pepper
2 cups of fresh cleaned spinach
1 tbsp of extra virgin olive oil
2 leaves of fresh basil
2 tbsp of grated parmegiano cheese
1. Using a blender, combine, plum tomatoes, garlic, oil and spices.
2. Place in a pot and add fresh spinach and cook for 3-5 mins.
3. Simmer on low for 30-40 mins.
4. Boil pasta and serve with sauce. Top with fresh parmegiano cheese.
