Lentil And Quinoa Stir Fry

1 540g can of lentiles
2 cups of dry quinoa
1 large chopped red pepper
1/2 a cup of fresh chopped cilantro
2 cloves of shredded garlic
1/4 cup of chopped spanish onion
3 tbsp of low sodium soya sauce
250-300g can of corn
Dash of salt and pepper
1 tbsp of extra virgin olive oil

1. In a wok add oil, garlic, onion, red pepper, corn, salt and pepper. Cook for 5 mins.
2. Add rinsed and drained lentiles and mix. Cook for 5-10 mins. Set aside.
3. In a seperate pot, boil quinoa for 12 mins and drain.
4. In a deep dish, add quinoa and then add vegetable stir fry.
5. Top with fresh chopped cilantro and soya sauce.
