Low Sodium Mexican Tacos








Mexican dinner night doesnt have to take a long time at all. As well, simple ingredients can create  a fabulous meal in a short amount of time and they can go a long way in making your dish taste just as tasty! My version of Mexican dinner night in this recipe, uses simple, clean and healthy ingredients. I didnt use any high sodium flavouring kits and instead, i used fresh spices like fresh cilantro, jalapeños and lime to add flavour. I used one pot to cook all my veggies and then baked the chicken breasts in the oven. This is such an excellent meal that the whole
family will enjoy! 

Ingredients:
2 large chicken breasts
1 medium can of corn (drained)
3 stems of chopped green onion
1 medium can of black or turtle beans (drained)
2 sliced jalopeno peppers (insides cleaned)
1/4 cup of cleaned chopped cilantro
1 lime thinly sliced 
1 lemon squeezed 
1 tbsp of paprika
1 tsp of salt and pepper
1 avocado sliced (optional)
1 tbsp of extra virgin olive oil
1 cup of shredded lettuce
1 cup of grated low-fat cheddar cheese
1/2 cup of low-fat sour cream
1/2 cup of fresh salsa
8 hard or soft taco shells (if you desire)

Directions:
1. Clean chicken and add salt, pepper , fresh lemon juice and paprika. Rub all over chicken and place on a baking tray and bake in oven covered for 30 mins at 425F. Broil uncovered for 5 mins.
2. In a large flat pot, add oil, onion, corn, beans, jalopenos, cilantro, salt and pepper and cook on medium heat for 10 mins.
3. Remove chicken breasts from the oven, and slice into pieces and add to veggies. Add sliced lime, lettuce, salsa, sour cream and grated cheese.
4. Serve with hard or soft taco shells or on it’s own! Your choice!
