Crispy Baked Avocado Croutons

Salad is such a great meal or side dish. What I especially love about salad is the fact that you can add so much goodness inside one single bowl. Avocados 🥑 are a great way to add healthy fats, extra vitamins and fibre into your salad. They can be added raw or baked and they will taste amazing! I have always loved crutons in my salad and so i thought of these avocado crispy crutons as a much healthier alternative. 

These crispy avocado crutons almost taste like breaded veal so they are a perfect alternative for those who love the taste of meat in their salads but cant eat it. As well, they are crispy yet still add that creaminess from the avocado. It is a very simple recipe which once again only has a few ingredients and is ready under 30 mins. 
These crutons are excllent to save in the fridge for up to 5 days and can be added to virtually any salad you make for the week! They save well and keep their crispness.

For this recipe you will need:

4 ripe avocados
1 cup of panko Japanese bread crumbs
2 tbsp of garlic powder
1 tbsp of cajun spice
2 tbsp of extra virgin olive oil
You can slice the avocados any way you please but i made them similar to the size of a cruton.

1. Peel and cut pieces of avocado into cube like shapes.
2. In a large bowl, combine, bread crumbs and spices.
3. Add avocado pieces to bowl ensuring they are covered in the bread crumb mixture.
4. Place breaded avocado pieces onto a tray lined with parchment paper.
3. Drizzle with oilive oil.
4. Bake in oven at 400F for 20 mins.
