Carb-Free and Gluten-free Cauliflower Crust Pizza

If you love to make pizza and eat it often, then you must try this carb-free version that is just as tasty and delicious!  This version uses cauliflower and egg for your crust so your never left feeling bloated, stuffed and tired. Let’s face it, too many carbs can weigh us down and make us feel sluggish ! This light pizza will keep you going, give you tons of energy and leave you feeling satisfied without any guilt!  It is a great way to keep the weight in check and still enjoy one of your favourite foods. I love adding veggies as my toppings but anything will work as long as you keep it carb-free!
If you love crispy crust, then only use one egg. If you prefer a more flufflier crust, then use two eggs.

For this recipe you will need:
1  cauliflower cleaned and stems removed
1-2 eggs (depending on how fluffy you want the crust)
1 cup of fresh spinach
1 cup of shredded mozzarella cheese  (u can use lactose-free or soy cheese if you prefer)
1 red pepper sliced
1/4 of a cup of chopped sweet onion
1 tbsp of salted butter
Pinch of salt and pepper
1 tsp of garlic powder

1. Using a blender or food processor, chop cauliflower into rice.

✏️ Investing in a really good food processor or blender is a really good idea as it will save you a ton of time and it will last as well. I love Kitchenaid or Cusinart as they are reliable products with excellent warranties and they really work well!!

2 Next, using a dishcloth, place rice cauliflower into cloth and squeeze excess water from it.

3. Using a large bowl, add riced cauliflower, 1-2 eggs, depending on how soft u perfer your crust, and salt, pepper and garlic powder.

3. Use a large rectangular pizza pan and greese it well with butter. Pour riced cauliflower on tray and flatten it out using your hands or large spoon. Bake in oven preheated at 425F for 10 mins. Remove from oven and add your toppings. Bake in oven for an additional 15 mins.
