Swisschard and Shrimps Drizzled With 🥑 Sauce

I absolutely love cooking with swisschard not only because its a leafy green and it is super nutritious, but because it tastes so good! In this recipe, i have paired it with a great lean protein and a great healthy fat that bumps up the fatty acids, flavour and health benefits. I added large shrimps and creamy avocado to make this a warm, filling and nutritious meal! Add not to mention, its virtually carb-free which is great for those who are counting their carbohydrates! As well, this recipe takes 20 mins and it is great for lunch or for dinner!
For added nutrients and balance, try adding steamed brown rice or quinoa to this dish.
As well, i prefer to purchase my fish fresh and local but if you prefer to buy frozen, select fish that is packed locally as there will be much less chances of it being contaminated.

1/2 spanish onion diced
1 clove of chopped garlic
1 cup of uncooked large shrimps
3/4 bunch of cleaned and chopped swisschard
1 avocado peeled and sliced
1 tbsp of fresh lime juice
1/4 tsp of salt
2 tbsps of extra virgin olive oil

1. Peel avocado and using a blender, blend avocado, lime juice and salt together and place aside. (Avocado and lime should be room temperature).
2. In a wok, add oil, onions, garlic and shrimps and fry for 5-7 mins. Empty shrimp, garlic and onions into a dish. Using the same wok, add 1tbsp of oil and swisshchard, stir and fry for 8-10 mins.
3. Add shrimps and onion back to wok and mix.
4. Remove from heat and drizzle avocado-lime sauce on top.
