Yam and Cheddar Cheese Bites

If you have children who hate to eat their veggies, then these yam cheddar bites are the perfect fix. They are great for any dinner party as an appetizer or side to any meal as well.
They are great because they provide all the fiber and nutrients that yams have and are delicious.
They are easy to prepare and so tasty that kids don't even know what is hiding inside of them.
Yams are the perfect veggie to add because they have great fiber and are sweet, so sugar is not needed.
With the sweetness of yams and the saltiness of cheese, you have the perfect combo.  You can make these bites with any kind of cheese really, but I prefer to use sharp cheddar cheese as my kids really love the taste of cheddar and i find that it works perfectly with this recipe!

For this recipe you will need:

1 large yam peeled and chopped into quarters
1 tbsp of flavoured bread crumbs
dash of cinnamon
1 egg
dash of garlic powder
1.5 cups of shredded sharp cheddar cheese
2 tbsp of milk
2 tbsp of salted butter

1.  Place peeled yam into a pot and boil for 10 mins and drain.
2. Using a blender, combine, cooked yams and remaining ingredients. Blend all together to a smooth consistency.
3. Place yam bites onto a baking tray lined with parchment paper. Roll each bite by hand into small balls using a teaspoon for measurement.
4. Place tray in the oven at 400F for 15-20 mins.

Makes 10-12 bites.
