Gluten-free Avocado Chocolate Fudge Brownies
Chocolate fudge brownies are such a great dessert that everyone seems to enjoy! I have tried many variations of recipes over the years, but this one is one of my favorites. I love it because it uses simple healthy ingredients and they taste amazing. They are also made with one of my favourite foods on this planet which are avocados 🥑. The creaminess of the avocados makes the brownies super moist and best of all, the brownies keep their chocolate colour so even the pickiest child won’t notice. As well, the taste of the avocado is hidden by the cocoa so they are great for those kiddies who dont like to eat to eat their fruits and veggies.
For this recipe all you will need is:
10 tbsp of unsalted butter
1 and 1/4 cup of brown or organic coconut sugar
1 cup of natural cocoa powder
2 small avocados peeled
1/4 teaspoon of seasalt
1 tsp of vanilla extract
1tbsp of extra virgin olive oil
2 large eggs
1 cup of gluten-free flour1/2 cup of dark or semi sweet choc chunks and sprinkles if you desire
1. In a saucepan with 1 inch of water, combine butter, salt and cocoa powder mixing it until it is smooth on low heat.
1. In a blender, combine avocado oil and vanilla until it turns into a smooth consistency.
2. Add the rest of the dry ingredients adding 1 egg at a time. Stir with a spatula. Add choc chunks at the end. ( do not blend choc chunks). Add the avocado and butter and cocoa mixture to the egg and dry mix. Mix slowly with the spatula.
3. Preheat oven to 350F. Using a square 8 inch baking tray, line it with parchment paper, bake in oven for 30 mins. Check with a toothpick ensuring it is cooked.
Makes approx 16 brownies
My kids loved them and it made me happy to know that they were eating healthy brownies!!
