One Pot Sausage and Sautéed Cabbage

This one pot German inspired dish is an absolutely tasty, simple and wallet friendly meal.  It is a carb-free dish that will leave you feeling full and satisfied. Cabbage is such an amazing vegetable for so many great reasons but the number one reason why I love cooking with cabbage is because you really can get your bang for your buck! As well, it tends to last for a long while in the refrigerator so you can make a few dishes out of it. I used sausage for this recipe but any protein like chicken, shrimps or even tofu would work. To save time, i used the cabbage coleslaw salad that is prepacked.  I also washed it a few times before i cooked it. As well, it already included wonderful colors like orange from the carrots and purple from the red cabbage, which makes the dish very appealing.  

For this dish you will need:
4 medium Italian sausages
1 bag of prepackaged coleslaw 
1 tbsp of extra virgin olive oil
A handful of fresh cherry tomatoes cut into halves
2 stems of celery chopped
1 cup of low sodium vegetable broth
1/2 of a Spanish onion chopped
Dash of salt and pepper
1/2 cup of fresh chopped chives
Fresh chilli flakes ( if you desire spice)
Directions:
1. Slice sausage into 1 inch round slices and set aside. In a large flat pot, add olive oil, onions and sausage. Cook for 10 mins on medium heat stirring every few mins.
2. Add celery, cherry tomatoes, coleslaw, broth, salt and pepper.  
3. Cook on med heat for another 
             10 mins then on low heat for an additional 5 mins.
4. Top with chilli flakes and fresh chives.
This dish is quick, inexpensive and will only require one pot! I am sure everyone will absolutely love it! It saves well and tastes amazing even the next day!
