Spicy Detox Lentil & Cabbage Tomato Soup


 What you will need for this recipe:

2 cups of colourful coleslaw cabbage salad
1 250g can of lentils
2 tbsp of extra virgin olive oil
2 cloves of chopped garlic
1/2 a Spanish onion chopped
1 cup of frozen green sweet peas
2 stems of chopped celery 
2 cups of low sodium vegetable broth
2 tbsp of tomato paste
1 cup of water
1/2 cup of multigrain rice or rice of your choice ( if you prefer to add rice)
1/4 of a tsp of salt and pepper 
1/2 tsp of tumeric 
1-2 tbsp of hot chili sauce ( depending on how hot you prefer your soup to be)
1-2 fresh bay leaves



Directions:
1. In a soup pot, add garlic, onions, celery and oil. Cook for 3-5 mins stirring often.
2. Add cabbage, peas, entire lentil can with liquid, water, broth and tomato paste. Stir well and then add all dry spices and bay leave.
3. In a seperate pot, boil multigrain rice according to directions (approx 15 mins) drain and add to soup if you desire the added fibre. Mix well.
4. Cook on medium heat with lid partially off for an additional 25 mins.
 Serves 6
