Spicy Chorizo Sausage, Kale & Black Bean Soup
3 chorizo medium hot sausage pieces cut into cubes
2 tbsps of extra virgin olive oil
2 garlic cloves finely chopped
2 stems of green onions chopped
1 900g carton of low sodium vegetable broth
1 cup of water
Dash of salt and pepper
1 medium bunch of fresh kale cleaned and chopped
1 250g can of black beans drained and rinsed
1. In a large pot add oil, garlic and onion and fry for 2-3 mins.
2. Add sausage, stir and cook for 8-10 mins or until all sausage is cooked.
3. Add kale and broth. Stir and cook on low heat for 10 mins.
4. Add beans and cook on low for an additional 15-20 mins.
