🌶 Spicy High Protein Vegan Chilli Bowl
1 540g can of fava beans washed and drained
1 large zucchini sliced into quarters
2 chopped celery stalks
2 peeled and chopped carrots
1/2 a cup of chopped white onion
2 cloves of chopped garlic
2 tbsp of extra virgin olive oil
1 large tomato chopped
1/2 of a red pepper chopped
1 cup of fresh cleaned spinach
2 tbsps of tomato paste
2 cups of water
Dash of salt and pepper
1 tbsp of hot sauce
1 tbsp of ground chilli powder
1 cup of shredded cheddar cheese
1/2 of a bag of nacho tortilla chips and/or fresh bread
1. In a large flat pot, add olive oil, garlic and onions and cook for 2-3 mins.
2. Add all fresh vegetables and add salt and pepper. Stir and cook for 5-10 mins on medium heat.
3. Add chilli powder, hot sauce, tomato paste and water. Mix and cook with the lid partially on for an additional 20-25 mins on medium heat.
4. Top with grated cheddar cheese.
