Vegetable Tortellini Soup

1 300g pack of fresh cheese tortellini
2 cloves of fresh chopped garlic
1/3 cup of chopped white onion
2 tbsps of extra virgin olive oil
1.5 (900g) boxes of low sodium vegetable broth
2 large carrots peeled and sliced into 1/2 inch pieces
2 celery stalks chopped 
1 large zucchini cleaned and sliced into pieces with skin on
1/3 cup of chopped fresh parsley 
4 large whole mushrooms cleaned and chopped
Dash of salt and pepper

1. In a large pot, add oil, garlic, onions, carrot and celery. Cook on medium heat for 5 mins stirring often. 
2. Add zucchini and mushrooms and cook for another 3-4 mins.
3. Add spices, parsley and veg broth and cook on low heat with the lid on for 15-20 mins.
4. In a seperate pot, add hot water and when it comes to a boil, add fresh tortellini. Cook for approx 5-7. Drain tortellini and add them to the soup. Mix and serve.
Top with fresh parmigiano cheese.
