Lentil Ginger Chicken Chilli Bowl

1 can of lentils rinsed and drained 
3 whole chicken breasts chopped into cubes
3 stems of fresh chopped celery 
1 cup of fresh washed spinach
1 tbsp of extra virgin olive oil
2 cloves of chopped garlic
1 cup of chopped white onion 
3 tbsp of tomato paste
2 cups of water
1 tsp of ground ginger
1 tsp of ground chilli
2 tbsp of hot sauce
1/2 tsp of ground cumin
1/2 tsp of sea salt
1/2 tsp of black pepper

1. In a large pot, add oil, onion and garlic and cook for 2 mins. 
2. Add chopped chicken. Cook for 5-10 mins.
3. Add celery, lentils, spinach, tomato paste, water, spices and hot sauce. Mix well and cook on medium heat for 25-30 mins with lid partially on. Stir half way through cooking.

Serves 4-6
