One Pot Sausage, Cabbage & Veggies

5 large pieces of uncooked sausage cut into 2 inch pieces
1/2 a cup of a sliced Spanish onion 
1 cup of fresh spinach
1 yellow pepper sliced
1 red pepper sliced
1 orange pepper sliced
2 cups of raw cabbage slaw salad
2 tbsp of extra virgin olive oil
3 tbsp of low sodium soya sauce
1/2 tsp of salt and pepper

1. Preheat oven to 425F.
2. Using a large corningware combine sausage pieces, onion, peppers, spinach, coleslaw, soya sauce, olive oil, salt and pepper.
3. Place in oven covered for 30 minutes mixing at half way point.
4. Remove lid and cook for an additional 10 mins.

Serves 4
