Pork & Beans Minestrone Soup

1/4 of a large piece of pork tenderloin (2 cups of raw chopped pork cut into cubes)
1 cup of chopped white onion
2 cloves of chopped or minced garlic
3 celery stems chopped into small pieces
2 cups of jarred purred Italian tomatoes 
1 clove of fresh thyme (to be removed once soup is cooked)
1 large white potatoe pealed and chopped into cubes
1 250g can of black beans drained and rinsed
2 tbsp of hot sauce (if you desire)
1/2 tsp of seasalt and pepper
1/2 tsp of ground ginger
4 cups of water
2 tbsp of extra virgin olive oil

1. In a deep large pot, add oil, garlic, onions and pork pieces. Stir and cook for approx 7-10 mins or until pork is golden brown.
2. Add potatoe pieces, celery pieces and beans and stir.
3. Add purred tomatoes, water and spices. Stir and cook on medium heat for 35 mins with the lid partially on. Remove thyme.

Serves: 4-6
