Quick Sausage & Quinoa Fry

1 tbsp of extra virgin olive oil 
4 pieces of store bought or home made spicy or sweet sausage
1 cup of raw quinoa 
1 orange pepper
1 leek
1/2 cup of fresh parsley 
2 tbsp of hot sauce (if you desire)
1/2 tsp of salt and pepper
1/2 cup of white wine

1. Chop sausage into 1/4 inch round slices and place aside. Chop up leek, pepper and parsley and place in a dish together.
2. Fill a medium sized pot with water and boil. Add quinoa and cook for approx 12 mins. Drain and place aside.
3. In a woke, add oil and sausage and cook on medium heat for 10 mins.
4. Add onion, pepper, parsley, spices and hot sauce and cook on low heat for 10 mins.                                      5. Add cooked quinoa and white wine and let simmer for approx 7-10 mins or  until the wine is absorbed.
