Buffalo Roasted Chicken & Veggies


Ingredients:
1 large whole chicken cleaned and cut into pieces
4 medium zucchini peeled and cut into squares-optional
1/2 cup of green hot peppers -optional
4 large carrots peeled and cut into rounds
1/2 a white onion chopped 
2 cloves of chopped garlic
1 handful of cherry tomatoes-optional
2 tbsp of buffalo chicken spice
2 tbsp of extra virgin olive oil
1 tsp of salt and pepper
400g of boxed Chicken Vegetable or Thai broth

Directions:
1. Preheat oven to 425F.
2. In a large roasting pan, add chicken, garlic, onions and veggies.
3. Rub buffalo spice onto chicken pieces, then add oil, salt, pepper and thai broth.
4. Cook in oven for 40 mins covered. Broil for 5 mins with lid off.

Serves 4
