Lentil Ginger & Broccoli Soup


Ingredients:
2 tbsps of extra virgin olive oil
1 900g carton of low sodium vegetable broth 
1 heaping tbsp of tomato paste
1 broccoli head chopped into small pieces 
1 clove of chopped garlic
1/4 of a tsp of fresh grated ginger
1 tsp of chilli pepper flakes
1/4 tsp of salt and pepper
2 stems of chopped green onion
2 stems of chopped celery 
1 540g can of lentil beans
1 tbsp of tobasco sauce

Directions:
1. In a large pot, add oil, garlic, onion and celery and cook for 3-5 mins on medium heat.
2. Add, broccoli, lentils, tomato paste, tobasco, grated ginger, vegetable stock and spices.
3. Mix well and cook on low heat with lid partially on for 35-40 mins.

Serves 4
