Potato, Lentil & Bean Minestrone
1.5 900g cartons of low sodium vegetable broth
1 can of lentils drained
1 can of black beans drained
2 medium potatoes peeled and chopped into cubes
1 broccoli florets chopped and cleaned
2 stems of chopped celery
1/4 of a spanish onion chopped
2 cloves of chopped garlic
2 tbsp of extra virgin olive oil
1 stem of fresh thyme
2-3 tbsp of tomato paste
Dash of salt and pepper
2 tbsp of hot sauce (optional)
1. In a large pot add chopped onions, garlic and oil and cook until onions and garlic turn golden brown.
2. Add potato, broccoli, celery, lentils amd beans and mix well.
3. Add spices, tomato paste, vegetable broth and hot sauce (optional).
4. Cook on low heat for 35-40 mins with the lid partially on.
