Seafood Sauce & Whole Wheat Spaghetti
1 350g pk of whole wheat spaghetti
1 cup of passata tomatoes
1 tbsp of tomato paste
1/2 cup of vegetable stock
2 cloves of chopped garlic
2 stems of chopped celery
1 stem of chopped green onion
1 950g bag of frozen seafood mix rinsed partially thawed
1/2 tsp of salt & pepper
2 tbsp of extra virgin olive oil
1 tbsp of fresh chopped parsley to garnish (optional)
1/3 of a cup of black pitted olives (optional)
1. In a flat pot add oil, garlic, onion and celery and cook for 2 mins on medium heat.
2. Add passata tomatoes, tomato paste, vegetable stock, olives and salt and pepper and let simmer for 10 mins.
3. Add seafood mix and cook on low heat for 20 mins stirring ocassionally.
4. In a seperate pot, boil pasta for approx 10-12 mins. Drain and pour into serving bowl. Top with seafood sauce. Garnish with parsley.
