Beef Strips With Caramelized Onions In A Lemon Brandy Sauce


4-6 thin slices of uncooked beef strips
1/2 a spanish onion cut into thin slices
1 cup of low sodium beef broth
3 tbsps of extra virgin olive oil
1/2 tsp of sea salt
1/2 tsp of pepper
1 lemon cut into 8 quarter slices 
1/4 of a cup of fresh diced parsley 
1/4 cup of brandy or white wine 


1. In a pan, add onions and oil and cook on low heat for 15 mins with the lid on ensuring onions are cooking very slowly to allow carmalization. Stirring only 1 time at half way point.
2. Once onions are cooked, remove them from the pan and place them in a seperate dish. Then, add beef or liver to pan and fry for two mins on each side. Add salt, pepper, beef broth, brandy or wine and lemon slices and cook on low heat for another 5-10 mins with the lid on.
3. Add carmalized onions and mix all together. Add fresh parsely and serve immediately.
