Gluten-Free Penne With Sweet Peas & Prosciutto
350g of gluten-free penne pasta
2 tbsps of extra virgin olive oil
1.5 cups of frozen sweet frozen peas
100g of diced prosciutto or pancetta
2 cloves of diced garlic
1 stem of diced green onion
1 450-500g can of good quality puréed can of tomatoes (San Marzano)
1/2 tsp of salt & pepper
2 leaves of fresh basil leaves
1 cup of fresh parmegiano grated cheese
1. In a large sauce pan, combine, oil, garlic onion and prosciutto. Cook for 2-3 mins. Add frozen peas, purred tomatoes, fresh basil and spices. Cook on low for 30 mins with lid partially on.
2. In a large pot filled with water, boil pasta for 10-12 mins. Drain and set aside.
3. Add cooked sauce to pasta. Top with fresh parmegiano grated cheese.
