30 Minute Mushroom Udon Soup
Two 750g cartons of mushroom broth (low sodium if you desire)
2 small carrots peeled and thinly sliced
1 cup of cremini or white mushrooms cleaned and sliced
500g of fresh or frozen udon noodles
1/4 of a spanish onion or green onion diced into small pieces
1/4 of a tsp of salt & pepper
1 tbsp of extra virgin olive oil
1 tsp of sesame oil
1. In a large pot, add oils, carrots, onions and mushrooms. Stir and cook for 5 mins.
2. Add broth and cook on medium heat with lid on for 10 mins.
3. Add udon noodles and cook for an additional 5 mins.
