Dry Spice Oven Baked Chicken & Veggies
Ingredients:
6 pieces of raw chicken thighs
2 large carrots peeled and cut into pieces
1/2 of a spanish onion cut into slices
2 white baking potatoes peeled and cut into quarters
1/2 cup of chopped curly parsley
2 tbsps of extra virgin olive oil
Seasoning Rub:
1 tbsp of dried cumin
1 tsp of paprika
1 tsp of dried garlic
1/2 a tsp of sea salt
1/2 a tsp of pepper
1/4 of a tsp of dried curry
Directions:
1. Preheat oven to 450F. Mix all spices together in a bowl and rub spices onto chicken.
2. In a large baking pan, combine chicken, onions, oil, onions and veggies.
3. Cook in oven for 35 mins covered. Cook for an additional 5 mins on broil uncovered.
