Italian Shrimp & Crab Salad


500g of fresh imitation crab
500g of large frozen cooked shrimps (thawed with tails removed)
1 white endive rinsed and cut into slices
1 small jar (170 ml) of artichokes in oil
1 can (375 ml) of black pitted olives
1 jar (340 ml) of roasted red peppers sliced into pieces
1/2 cup of fresh chopped curly parsley 
500g of fresh mozzarella cheese cut into squares 


1 tsp of dried oregano
1/2 tsp of salt & pepper
1 tsp of dried basil
1/4 cup of extra virgin olive oil
1/4 cup of apple cider vinegar 
1 tbsp of fresh squeezed lemon


1. Place all ingredients in a large bowl and add dressing. Mix and refrigerate for 3 hours before serving.

Serves 6-8
