300g of quinoa pasta or pasta of your choice
340g bag of pink frozen medium sized shrimps
2 tbsps of extra virgin olive oil
1 clove of grated garlic
1/2 cup of fresh cut curley parsley
1/2 cup of vegetable broth
1 cup of shredded red reddichio
1 tbsp of tomato paste
1 cup of low fat cream
1/2 cup of romano grated cheese
1/2 tsp of sea salt and pepper
1. In a large sauce pan add oil, radicchio and shrimps. Add salt
2. Add tomato paste, vegetable broth and cream. Mix well. Add grated cheese and parsley.
3. In a seperate pot, boil water and cook pasta according to directions. Approx 8-11 mins.
4. Drain and add pasta to the sauce.
