Cauliflower Rice Vegetable Risotto

2 cup of grated cauliflower 
1/2 cup of cleaned cherry tomatoes 
1 cup of fresh, cleaned organic spinach 
1 celery stem chopped into small pieces
1 cup of vegetable broth
1 clove of grated garlic
1/4 cup of white onion chopped into small pieces
1/2 tsp of salt & pepper
2 tbsps of extra virgin olive oil
1/2 a cup of grated parmegian cheese

1. In a large pan, add oil, garlic, celery and onion and cook for 2 mins stirring often.
2. Add grated cauliflower, spinach, tomatoes, broth and spices. Cook for 8-10 mins stirring often.
3. Add parmegian cheese, stir and serve.
