Linguine in a Ground Sausage, Mushroom & Roasted Red Pepper Tomato Sauce


4 sausages cut into small bite size pieces
1 cup of sliced white mushrooms
1/2 cup of  roasted peppers ( jarred is fine as well without vinegar  )
3 tbsps of tomato paste
1 cup of chicken broth
2 green onions chopped into pieces
2 tbsps of extra virgin olive 
1/4 of a tsp of pepper
2 pieces of fresh 🌿 basil
1 350g pack of linguine pasta


1. In a large sauce pan, combine olive oil and sausage and cook on medium heat for 10 mins.
2. Add mushrooms and peppers, stir and add tomato paste, broth, spices and fresh basil. Cook uncovered for 10 mins.
3. Add green onions and simmer on low heat covered for 10 mins.
4. In a separate pot, bring water to a boil and add linguine pasta. Cook for 10-12 mins. Drain and add pasta to sauce mixture.
