1 whole large chicken cleaned and cut into pieces or 6 large chicken breast will work as well.
1 large lemon sliced into 1/4 inch thick
1/4 of a white onion sliced
2 cloves of garlic finely chopped
3 tbsps of extra virgin olive oil
2 tbsps of dijon mustard
1/4 of a cup of chopped sage
1/2 tsp of salt and pepper
1/2 tsp of dried basil
1/2 tsp of tarragon
1/2 tsp of chilli powder
1 cup of chicken broth
1. Preheat oven to 450 F. In a large roasting pan, combine chicken pieces, onion, garlic, broth, oil and spices.
2. Add sliced lemons halfway through cooking to avoiding burning them.
3. Cover with a lid and cook for 25 mins. Add fresh lemons on top and cook
for an additional 15 mins.
4. Broil uncovered for 8-10 mins. Remove from oven.
