Crab & Artichoke Summer Salad

Ingredients:

2 200g packs of crab meat (real or imitation)
1 400ml jar of artichoke hearts rinsed and drained
2 large tomatoes cut into quarters
3/4 of a cup of green or black olives (no pits)
1/4 of a red onion finely sliced
a small handful of fresh chopped parsley to garnish

Dressing: 

3 tbsps of extra virgin olive oil 
2 tbsps of apple cider vinegar 
1/4 of a tsp of oregano
1/4 of a tsp of garlic powder
1/4 of a tsp of salt
1/4 of a tsp of pepper

Directions:

1. Combine all ingredients together. Mix well and place in the fridge for 2-3 hours before serving.

Serves 4-6
