🌱 Vegan Vegetable & Rotini Pasta Soup

2 900g cartons of vegetable broth 
2 tbsps of extra virgin olive oil 
1 clove of minced garlic
1/4 of a white onion finely chopped
2 large carrots peeled and sliced into rounds
1 540g can of black or turtle beans rinsed well
1 cup of frozen sweet green peas
1 cup of fresh cauliflower florets
1 cup of fresh spinach
1.5 cups of green rotini pasta
1 tsp of franks red hot sauce ( this is only added for flavour. It won’t make the dish spicy unless you add more)
1/2 tsp of seas salt
1/2 tsp of pepper
1/2 tsp of dried celery
1/2 tsp of dried thyme

1. In a large pot add oil, garlic, onion, carrots and cauliflower and stir. Cook for 5-7 mins. 
2. Add frozen peas, beans, spinach, spices, hot sauce and broth. Cook on medium heat with lid on for 15-20 mins.
3. Add rotini pasta to the soup and cook for an additional 10 minutes on medium heat with the lid off.

Serves 4-6
