Cheese Tortellini & Tomato Pasta Salad
1 kg of colourful cheese tortellini
1 small pint of cherry tomatoes
4 large bocconcini cheese balls cut into slices
4-6 pieces of fresh chopped basil
3 tbsps of extra virgin olive oil
1-2 tbsps of fresh lemon juice
3 tbsps of white whine vinegar
1/2 tsp of dried garlic powder
1/2 tsp of dried onion powder
1/2 tsp of dried oregano
1. Boil tortellini al dente approx 5-7 mins and drain well.
2. In a large bowl, combine tortellini & cheese slices, dressing and top with fresh chopped basil.
