Crockpot/ Instapot Chicken & Veggies Al Pomadoro

4 medium sized chicken breasts bone-in
1 350g can of diced tomatoes (garlic and herb seasoned)
1 cup of water
3 peeled chopped carrots
3 chopped celery stalks
4 large white potatoes peeled and chopped into quarters
1 cup of whole white or brown mushrooms
1/2 of a large Spanish onion cut into thin slices
2 tsps of starch (optional for thickening sauce)
2 cloves of fresh grated garlic
1 stem of fresh thyme
1 stem of fresh sage
1 tbsp of sea salt
1 teaspoon of pepper
1 tbsp of dry Italian seasoning spice

1. Place all ingredients into Instapot for 1 hour or 5 hours in the crockpot.
Serves: 4
