Vegan 🌱 Mediterranean Layered Nacho Dip
1 227g container of original hummus dip
1/4 of a red onion diced into small cubes
1/2 of a peeled cucumber 🥒 chopped into small cubes
1 small pint of cherry tomatoes cut into small cubes
150ml or 1/2 a jar of chopped kalamata olives
A few fresh pieces of chopped curly parsley to garnish
1. Use a 12x5 sized dish and layer all ingredients.
2. First place hummus, then onions, then cucumber, then tomatoes, then olives and garnish with fresh parsley.
Serve with your choice of crackers or nachos.
