Colourful Rice Stir Fry
For these colourful rice dishes you may use bacon if you prefer the meat or you can go meatless. In one of the rice dishes i added green squash and in the other dish, i used bacon. You could always combine both ingredients into one rice dish if you desire. These are great sides to make and freeze and they can serve many people if you double up on the ingredients.
2 cups of white or brown rice
2 tbsps of extra virgin olive oil
2 cloves of chopped garlic
1-2 cup of frozen sweet peas
1/2 cup of fresh parsley
1-2 cups of frozen corn
1 medium green squash cut into small
1 pack of bacon cut into 1/2 inch pieces
1 tsp of salt
1 tsp of pepper
A few pieces of fresh thyme (to be removed)
1 tsp of all spice dressing (optional)
1. Boil rice and drain and set aside.
2. In a large wok or pan add bacon and cook for 3 mins. Add peas, corn, parsley and oil and cook on medium heat for 8-10 mins stirring often. Add thyme and seasonings. Set aside.
3. Add boiled rice. Mix well with a large fork and spoon. Remove thyme.
Serves 6-10 sides. Enjoy!
