Hearty “Noodle-Less” Chicken Soup

2 large boneless chicken breasts
2 cloves of chopped garlic
1/4 of a Spanish onion finely chopped
2 pieces of celery stalks chopped into pieces
4 mini red and yellow sweet peppers cleaned and cut into slices
2 large carrots peeled and chopped into pieces
1/2 a cup of cleaned sliced mushrooms
2 cups of water
1 pack of onion soup mix

1. Place all ingredients into the crockpot for 5 hours on low or 1 hour in the Instapot.
2. Remove chicken breasts from pot and using two forks, pull chicken apart into shreds. Place shredded chicken back into crockpot. Mix well and serve.
