🌱 Peanut Cauliflower Rice

3 cups of grated cauliflower rice
3 tbsps of avocado oil or extra virgin olive oil
1 cup of chopped white onion
1 clove of chopped fresh garlic
1/3 of a cup of chopped fresh parsley
3 heaping tbsps of jarred peanut sauce (store bought)
1/3 of a cup of crushed walnuts

1. In a deep pan, add oil, garlic and onions. Stir and cook for 2-3 mins.
2. Add cauliflower rice and parsley and cook for 3 mins.
3. Add peanut sauce and walnuts and cook for another 3 mins.

Serves 4
