Healthy Bake Chicken Parmesan Casserole
4 chicken breasts
1 300g can of cherry tomatoes
4 heaping tbsps of red pesto sauce
1 white sliced onion
1/2 a cup of white wine
2 cloves of chopped garlic
1/4 of a cup of extra virgin olive oil
1 tsp of sea salt
1/2 tsp of pepper
1/2 tsp of dried rosemary
1/2 tsp of dried oregano
1/2 a cup of seasoned breadcrumbs
2 large yams cut into quarters
2 large zucchini cut into quarters
1/2 a cup of fresh cut parsely
4 slices of provalone or swiss cheese
1. Preheat oven to 450F. In a large bowl, place chicken breasts and add pesto. Mix together and rub pesto all over chicken.
2. Add chicken breasts to a large casserole dish and add veggies, onions, garlic, spices and pour canned tomatoes over top. Add breadcrumbs on top.
3. Place casserole into the oven covered with foil. Cook for 45 mins.
4. Add a slice of cheese over each chicken breast and cook for an additional 10 mins. Garnish with fresh parsley.
