Crunchy Lemon 🍋 Salmon
2 servings of fresh or thawed Atlantic salmon fillets
1/2 a cup of chopped walnuts
1 heaping tbsp of maple syrup or glazed balsamic vinegar
1/4 of a cup of chopped curly parsley
2 cloves of chopped garlic
1/2 a tsp of salt & pepper
1 lemon sliced thinly
1/4 cup of fresh squeezed lemon juice
1. Place salmon fillets (skin down) on a large sheet of aluminum foil.
2. Add salt, pepper, chopped garlic, syrup or balsamic vinegar and rub well onto salmon.
3. Add fresh parsley and walnuts.
4. Cover well with foil and cook in the oven at 400F for 20 mins. Remove foil cover and broil for 3-4 mins.
